With Lukas and Jonas Klöckner, the eighth generation has joined the company. Both bring different preferences: while Jonas is more at home with whiskey, Lukas is enthusiastic about hazelnut liqueur. Regardless of personal preferences, both are united by the unconditional demand for quality in the products.
In the distillery, it is important to combine manual processes with modern technology. While many processes are still carried out by hand, the most modern technology is used when bottling in order to save time and be able to concentrate on the essentials: distilling the best spirits.
In the Birkenhof distillery there is great respect for the craftsmanship of the distillers. It requires skills such as patience and waiting for the right moment to pull the whiskey from the cask or distilling the perfect mash at just the right time. But the right timing of bottling and storage is also crucial and requires a well-organized operation.
Barrel management is an art. It requires a lot of time, leisure and skill. Each cask has its own individual character and a story whose facets it passes on to the distillates. From the selection of the casks to the bottling, it is a process that stretches over many years. At the end there is a distillate that makes you proud.
